Tomato abundance.

Our tomatoes have definitely exceeded our expectations this year! We planted around 65 or so. Along with a few other varieties, we tried a new variety called Mountain Fresh that we bought from the Amish - a friend of mine planted that kind last summer with great results (when ours were stricken by a blight and we barely got any), and they haven't disappointed! We have already canned about 28 quarts of diced tomatoes and tomato sauce. We used some of the sauce in a homemade spaghetti sauce recipe last week and it was AMAZING! As I type this, there are @100 tomatoes on the kitchen counter, picked on Saturday, that are ready and waiting to be blanched, peeled, cooked and pureed, then canned. That will net at least 14 quarts (2 batches) if not a third batch. We've also given away a couple of 5 gallon buckets worth of tomatoes to friends and John's co-workers. Beautiful!
